Our Founder, Akinori Itoyama (based in Japan), uncovered a challenge hidden in plain sight: Traditional brewing discards up to 70% of a bean’s flavour, aroma, and potential. Itoyama was determined to eliminate coffee grind waste, which led him to micro-grinding technology, which allowed him to preserve the full coffee bean.
His decades of experience working with coffee inspired him to pioneer a more sustainable future for the industry.
Co-Founder Mizuki Watabe advances this vision worldwide, backed by a strong background in business development and international growth.
Mokable works closely with small-scale farmers and roasters to source specialty, single-origin coffee that deserves to be fully appreciated. By grinding each bean whole and pairing it with clean, plant-based ingredients, we elevate the craft of coffee while reducing waste across the value chain. More than a bar or a bite, Mokable is a new ritual for coffee lovers and beyond who value flavour, ingenuity, and a future where every bean’s hard-earned character is celebrated.
