Akinori Itoyama is a scientist-turned-innovator whose career bridges research, strategy, and product creation. After earning his PhD in Molecular Biology from Kyushu University, he joined Suntory Holdings, contributing to R&D and the launch of iconic beverages including “BOSS” canned coffee.
While working on BOSS, Aki uncovered a surprising truth: traditional coffee brewing discards up to 70% of the bean’s flavour and aroma. Determined to change this, he envisioned a new way to enjoy the whole coffee bean. Through Suntory’s internal venture program, he developed the concept for an edible coffee—coffee you can taste, savour, and enjoy like fine chocolate.
That vision became Mokable, first launched in Japan as CAFEXLATE. Today, Aki leads Mokable’s innovation as it expands internationally, combining Japanese craftsmanship, scientific precision, and a dedication to sustainability to create a category-defining experience for coffee lovers worldwide.
Mizuki Watabe is the driving force behind Mokable’s expansion into North America, bringing the brand’s Japanese-born innovation to a new audience of coffee lovers, hospitality leaders, and innovative manufactures. With a background in international food trade, sustainability, and brand development, Mizuki has spent her career helping emerging food and beverage brands find their place in premium markets.

Based in Toronto, she leads Mokable North America with a blend of strategic vision and hands-on execution, from building brand foundation and forging partnerships with premium accounts to steering product development that meets the region’s demand for organic, clean-label, and sustainable options.
